Kale can stand deep freezes and will come back a 2nd year. Kale and Collards will flower the 2nd year. You can eat the flowers, buds and leaves. It make a wonderful spring salad. This is how I make a basic olive oil and red wine vinegar kale salad. Absolutely delicious! A perfect spring treat you can only get from your garden.
